Bai Mu Dan Chinese. Literally, White Peony. Fujian white grown mainly in the counties of Jianyang, Zhenghe, Songxi and Fuding. First produced in 1922 in Jianyang County before Zhenghe and then Songxi County became the main producing areas. Todays principal Bai Mu Dan production is in the Taimu mountain district of Fuding due to its extraordinary cultivars and subtropical environment. Bai Mu Dan consists of the smallest bud and first two leaves of the new shoot. These are either sun-dried, naturally dried indoors, or machine-dried at low temperaturesalways depending upon the weather conditions. The flat open leaf yields a pale orange-yellow liquor with delicate sweet flavour, sometimes enhanced with dried rosebud or chrysanthemum. Beloved by south China and the worlds most forgiving tea.
